Candied walnut and goat cheese salad

I first ate this salad at a local eatery near us, and nearly died from happiness. I simply HAD to figure out how to make it for myself, so — thanks to the power of the internet — I’ve come up with a recipe that makes my toes curl with joy.

The only “special” ingredient that I don’t normally keep in my pantry is the goat cheese — but, after having this salad the other night, I can promise you that goat cheese will be on my shopping list all summer long. Yum!

Speedy tomato sauce

I’ve been meaning to post about the simple, tasty tomato sauce I learned to make from — who else — America’s Test Kitchen. Then the planets aligned this week and, TA DAH! First off, I discovered that the recipe was freely-accessible on the ATK website (and not just for web members). To seal the deal, chicken parmesan ended up on the menu for Tuesday, and Jilly’s husband Thom was in town and could join us for dinner.

No way was I serving him sauce from a jar! Not when I had this 15-minute wonder in my arsenal!

It doesn’t take a lot of ingredients and they are easy to keep in the pantry for emergency spaghetti nights!

Something I do a lot…

And by “a lot,” I mean A.L.O.T. It’s a matter of self-preservation, really, because all the commercially-produced gluten-free breads taste like cardboard. *Patoooooie!*

After nine months of making it myself, I’ve worked up quite a tasty, moist version using Pamela’s Bread Mix. (I actually buy this mix in 25 pound bags from Amazon.com, and have even signed up for their automatic delivery system. It really brings the cost down from “Ow-ow-ow!” to “it’s worth it.”)

The Hubster has not yet fully assimilated this new technique, so he asked that I document it for him… and you guys get to come along for the ride. :)

“Filler” up

There’s a staple meal in our household, and The Hubster dubbed it “Filler” years and years ago, back when we were poor students surviving on canned beans. Even now, we love this for its ease, economy, and flexibility. And… with Cinco de Mayo coming up, I thought I’d share it.

You can really adapt this recipe to whatever you have in your pantry.
